Black bean and sweet potato burrito recipe

Combine fibre-rich sweet potatoes with protein-packed black beans to make a satisfying burrito that is not only meat-free but works for a lunch or dinner. This recipe has been developed by nutritionist Faye James and can be made in less than 20 minutes.

Ingredients for black bean and sweet potato burrito recipe

1 brown onion, diced

3 medium sweet potatoes, peeled and diced

1 cup black beans, cooked

1 cup avocado, mashed

2 cups of spinach

6 quinoa wraps

Method to make black bean and sweet potato burrito recipe

Sauté diced onion and sweet potatoes.

Cover and let cook over medium-high heat for 5-7 minutes.

Add the black beans. Stir, cover, and let cook for 10-15 minutes, or until the sweet potatoes are tender. Remove from heat and set aside.

To assemble your wrap, spread with mashed avocado and spinach, then top with sweet potato mixture before folding up your burrito.

Serve with lime wedges and sliced fresh chilli.

Wraps can be used for easy dinner and lunches, and you can turn them into burritos, pizza, quesadillas and even tortilla cups. A wide variety of wraps are now available at the supermarket, including gluten-free and high-protein or high-fibre wraps. Mountain bread can also be used in place of wraps.
