Gluten-free no-sugar Anzac biscuits recipe

The traditional Anzac biscuit has had a nutrition upgrade with Faye James' low-sugar version

Anzac biscuits are usually made with rolled oats, flour, desiccated coconut, golden syrup, butter, sugar, and baking soda.

The biscuit name became well-known after World War I when the no-egg biscuits didn't spoil when sent as 'care packages' to support the Australian and New Zealand Army Corp on the front.

Ingredients for Anzac biscuits recipe

2 cups of almond meal

2 cups of shredded coconut

1/2 of coconut oil, melted

1/2 cup of maple syrup

2 teaspoons of baking soda

Method to make Anzac biscuits recipe

Preheat oven to 180 degrees. Mix your dry ingredients in a bowl, then add the coconut oil and maple syrup, mix to form a dough, add a little water if it's dry. Roll into even balls then place on an oven tray lined with baking paper and flatten the biscuits. Bake until golden brown. Store in an airtight container once cooled.
