Hearty and healthy keto waffle recipe

These waffles are made with cauliflower and cheese to create a hot and melt-in-the-mouth breakfast, lunch or dinner. Try serving them with a side of poached eggs, mashed avo and crispy bacon for a protein-rich brunch. Recipe developed by nutritionist Faye James.

Ingredients to make healthy keto waffles recipe

1 medium-sized cauliflower

½ cup mozzarella, shredded

½ cup parmesan, shredded

2 eggs

½ tablespoon of almond meal

2 scallions, chopped

Salt and pepper to taste

Method to make healthy keto waffles recipe

Pop all the ingredients in a blender and pulse until you have a smooth batter. Pop your batter into a greased and heated waffle maker. Cook until browned and serve with desired sides.
