Ingredients for turkey mince flatbread recipe
1½ tbsp psyllium husk
1 1 / 3 3 cup coconut flour
½ cup lukewarm water
1 tsp olive oil
½ tsp bicarb (baking) soda
½ tsp salt
1 tbsp olive oil
2 garlic cloves, minced
1 brown onion, diced
1 tsp ground cumin
1 tsp ground cinnamon
1 tsp smoked paprika
250 g turkey mince
2 ripe tomatoes, diced
Method to make turkey mince flatbread recipe
First make the flatbreads by mixing the psyllium husk and coconut flour in a bowl. Add the water, olive oil and bicarb soda and mix to create a dough. Knead the dough with your hands for one minute. If it is sticky, add a little extra coconut flour. Set the dough aside to rest for 10 minutes.
Meanwhile, make the topping by heating the olive oil in a frying pan over medium heat. Add the garlic and onion and sauté for 2–3 minutes until translucent.
Add the cumin, cinnamon and paprika and fry for about a minute until fragrant.
Add the turkey and cook for a further 8 minutes or so until the meat is browned and cooked through.
Stir through the tomatoes and cook for another 5 minutes until cooked through.
Meanwhile, divide the dough into four equal balls. Roll the balls between two sheets of baking paper to around 20 centimetres in diameter. Heat a large frying pan over a medium heat and cook each flatbread for 2–3 minutes each side. Top with the turkey and serve.
Citro food tip
Want a vegan version? Use soy plant-based mince, such as Quorn, instead of turkey mince. These flatbreads taste best when freshly cooked - you may even want to use them to serve with healthy dips like hummus or baba ganoush.
